If you answered yes to any of those questions, mug cakes are for you! With just a microwave, mug, and a few ingredients that you most likely already have, you can create a delicious, single-serving of cake!
Recipes
Mug Cake 1
Makes one mug
Ingredients
1 slice butter, 1cm thick
1 egg
2 Tbsp superfine sugar
1 tsp vanilla extract
2 Tbsp unsweetened cocoa powder
4 Tbsp all-purpose flour
½ tsp baking powder
Directions
In a large mug (8oz or larger)
Melt the butter in the microwave for 30 seconds.
One at a time, whisk in the egg, superfine sugar, vanilla extract, cocoa powder, flour, and baking powder.
Microwave for 1 minute and 20 seconds.
Allow to cool for one minute before eating
Mug Cake 2
Makes one mug
Ingredients
1 slice butter, 1cm thick
1 oz milk chocolate
1 egg
2 Tbsp superfine sugar
½ tsp vanilla extract
4½ Tbsp all-purpose flour
½ tsp baking powder
Directions
In a large mug (8oz or larger)
Melt the butter and the chocolate in the microwave for 30-40 seconds. Whisk until smooth and allow to cool slightly.
One at a time, whisk in the egg, superfine sugar, vanilla extract, flour, and baking powder.
Microwave for 1 minute and 20 seconds.
Allow to cool for one minute before eating
Frosting
Ingredients
About 2 oz cream cheese
A splash of milk/half and half/whipping cream/heavy cream (whatever you have on hand)
Confectioners (powdered) sugar
Directions
In a bowl
Beat the cream cheese until smooth.
Add a small splash of milk/cream to loosen the mixture. Whisk to combine.
Add 1 Tbsp confectioners sugar and whisk to combine.
Taste and add more sugar or milk as required to achieve a sweet frosting.
Dye the frosting if you wish.
Spoon into a ziplock bag, cut the tip off and pipe a swirl on top (or you can just dollop it on)
Eat!
Tips and Tricks
If you’re making multiple mugs, microwave them one at a time
The cake can be very thick, so use a toothpick, fork, or a knife to poke holes all the way through the cake then pour a little milk over the top before frosting
To make superfine or confectioners sugar, put some white sugar into a blender, blend into a powder for confectioners sugar or stop just before a powder for superfine.
You can top the cakes anyway you wish, a dusting of confectioners sugar or cocoa powder, candies, sprinkles, chocolate or caramel sauce, fruit, more chocolate, or whatever you dream up!
